What is the nutritional value of eggplant?

Eggplants are not a particularly nutritious vegetable however they are low in fat and calories and high in folacin. Eggplants do not contain much fiber and are low in protein. They are also low in sodium, carbohydrates, saturated fat and cholesterol. Eggplants absorb more oil than any other vegetable which can be good from a cooking perspective and bad from a weight loss one!
