    Herbed Barley And Lentils
    Serves: 4

    Ingredients

    • 1/2 cup chopped onions
    • 2 cloves garlic, chopped
    • 1 cup hulled barley*
    • 1/4 cup lentils
    • 3 cups water
    • 1/2 teaspoon Italian seasoning
    • 1 tablespoon finely chopped fresh chives (or 1 teaspoon dried)
    • 2 tablespoons finely chopped fresh basil (or 1/2 teaspoon dried)

    Directions

    1. In a large saucepan, water sauté onions and garlic in a small amount of water until soft.
    2. Add remaining ingredients and bring to a boil. 
    3. Reduce heat, cover and simmer for 1 hour or until barley and lentils are tender and water is absorbed.

    * Hulled barley is barley that has been minimally processed to remove only the tough inedible
    outer hull. Do not use pearled barley; it receives additional processing and has a lower nutritional
    value.
