What is the difference between virgin and extra virgin olive oil?

The terms virgin and extra virgin olive oil refer to the acid content of the oil, not its nutrient content. All types of olive oil are high in monounsaturated fatty acids and contain the same number of calories.

Extra virgin olive oil contains less acid and has a fruitier flavor than "pure" or "virgin" olive oil. Because it has more aroma and flavor, you can use less.
 
Don't be confused by the term "light" in reference to olive oil. "Light" means the color and fragrance, not calories, fat content or flavor.
