Coconut is a plant food and like virtually all plant foods, it's rich in nutrients. Coconut meat, milk, oil, and cream can all be part of a healthy diet. (The oil, which is solid at room temperature, is excellent for cooking.)

On the other hand, sweetened coconut products, such as the flakes used in baking and the cream used for pina coladas, are not recommended for people with diabetes.
