Savory spicy slaw recipe

This Asian-inspired slaw is easy to prepare and pairs well with most any entree.

You need at least five servings of fruits and veggies each day for optimal health. Get a couple servings with this spicy coleslaw and pair it with your favorite sandwich for a great post-workout meal.

Ingredients

  • 2 tbsp fresh lime juice
  • 2 tbsp rice vinegar
  • 1 tbsp vegetable oil
  • 2 tsp sugar
  • Salt
  • 1/2 small head Napa or green cabbage, shredded
  • 1 cup fresh cilantro leaves
  • 4 scallions, cut into matchsticks
  • 1 grated carrot
  • 1/2 fresh jalapeno, minced

Preparation

In a large bowl, combine lime juice, rice vinegar, vegetable oil. and sugar. Season with salt and whisk.

To dressing, add cabbage, cilantro, scallions, carrot, and jalapeno, and toss to combine.
