Feed-Your-Brain Breakfast Burrito Recipe

It’s quick, easy, and full of protein and nutrition.

Tortilla wraps

Ingredients:

1 tsp olive oil
1 sprouted-grain tortilla or coconut wrap
2 large egg whites
1 slice of avocado
⅛ cup salsa
¼ cup broccoli florets
⅛ cup spinach
⅛ cup chopped onion
½ tbsp garlic

Preparation (Serves 1):

  • Heat oil in a heavy-bottomed skillet over medium heat. Add vegetables and sauté until slightly tender, about 2 to 3 minutes. If using spinach, do not add until the very last minute.
  • Add egg whites. Stir until cooked through. Remove from heat.
  • Warm tortilla in a pan briefly.
  • Pour egg mixture in the center of the tortilla. Use salt and pepper if desired.
  • Add slice of avocado to tortilla. Add salsa as desired.
