Mushrooms, interestingly, are a great source of Vitamin D. Now, all of them have a decent amount of Vitamin D, but there are some that are specially treated with light at the end of their harvest, and these typically will say on the package, UV exposed or Vitamin D treated, and they have 400 units for just three ounces.

So, not all vegetables can do this, but Vitamin D, in particular in mushrooms, when you expose the mushrooms to sunlight, they're able to convert some of their nutrients into vitamin D, so this is something unique about this vegetable, so toss them into your stew fry, on your stew or on your pasta, and you're good to go.
