How can I choose the most nutritious milk?

Milk comes in a variety of qualities. There is the milk that comes from cows raised mostly outdoors on grass without growth hormones. This product has a very different nutritional profile than the milk that comes from cows raised mostly indoors on corn and soy with growth hormones to boost milk production and antibiotics to treat the ailments that result from over-milking and dirty, crowded conditions.

Just as with the meat from a cow raised on grass, dairy from grass-fed cows has more of the anti-inflammatory omega-3 fatty acids, vitamin A, beta-carotene, and the omega-6 fatty acid conjugated linoleic acid (CLA). This kind of milk is also free of recombinant bovine growth hormone (rBGH), a synthetic growth hormone banned from use in Canada and Europe for its suspected link to cancer. Milk in the United States that is produced in industrial milk operations is from cows that have been treated with rBGH. So, unless your milk is organic or labeled to indicate that it is rBGH free, you're drinking milk produced with this hormone. Industrially produced milk also has far lower (if any) levels of CLA and significantly reduced amounts of the other nutrients I've mentioned.
