What is a kid-friendly, low-carb salmon recipe?

Kids will love these fish-shaped patties for their taste. You may focus on another selling point: salmon's heart-friendly omega-3 fatty acids. And because this recipe is a low-carb, bun-less alternative to a burger, it's good for your blood sugar, too.

Salmon Patty for Kids

Ingredients

1/3 cup corn flakes cereal, crumbled
1 egg
2 tbsp whole milk
3/4 tsp dried dill weed
1/8 tsp black pepper
1 dash hot pepper sauce
14-1/2 oz canned salmon, drained
cooking spray
1 tsp olive oil
6 tbsp tartar sauce
3 pimientos, cut into 5 small pieces

Directions

1. In large mixing bowl, mix cornflake crumbs, egg, milk, dill weed, black pepper, and hot pepper sauce. Add salmon; mix well.
2. Shape salmon mixture into 5 large egg-shaped balls. Flatten each into 3/4-inch thick oval (shape like a fish). Pinch one end of each oval into fishtail shape.
3. Coat large skillet with cooking spray. Heat over medium high. Add salmon patties and cook 3 minutes or until lightly browned.
4. Add oil to skillet. Flip patties and cook 3 minutes or until firm and lightly browned.
5. Place small drop tartar sauce and pimiento on each fish for "eye." Serve with remaining tartar sauce (optional).

Additional Information
Serve with romaine lettuce on the side to create the look of sea plants.
