What oils can I use for marinades and dressings?

These oils are suitable for gently warmed dishes, marinades, or salads:
  • olive oil
  • toasted sesame oil
  • all unrefined oils
  • walnut oil
  • hazelnut oil.
These oils impart distinct flavors of their own and can be combined with lemon or lime juice, or balsamic vinegar. You can also infuse oil with herbs and spices such as basil, mint, cilantro, rosemary, thyme, ginger and red pepper. Try canola oil here, too. Sprinkle the infusion on veggies, over grilled fish, or brown rice. Bam!
