The pasteurization process heats food to a certain temperature to kill harmful bacteria that may be present. Pasteurized eggs should be used in dishes that call for raw or undercooked eggs -- for example, Caesar salad dressing or homemade ice cream. Use either shell eggs that have been treated to destroy Salmonella by pasteurization, or use pasteurized egg products.
