What are extra-large or jumbo eggs?

A special consideration for eggs is their size. When you see the labels "extra-large" or "jumbo," it's possible that these eggs are from chickens that were forced to molt by being deprived of food for several days. Unfortunately, this is common practice in the industry as a way to extend the egg-producing life of the hen. When hens that have been force-molted start to lay again, they lay fewer but larger eggs. Some egg producers are investigating non-feed-deprivation means of speeding up the molting process, but there's no way to know unless you talk directly to the producer. If you're buying your eggs from a farmers' market or small producer, ask them if they molt their hens or if they let the hens go out of lay for part of the year (a natural part of the laying cycle for the hen).
