So using resistant starch flour has a lot of health benefits. Number one it tends to have more fibre than typical white flour, number two it has fewer clories and again causes less glucose release, less insulin. So you can quite easily substitute up to 1/3 of a recipe calling for regular flour with a resistant starch flour like sorghum flour, maize flour or green banana flour and you'll typically end up with about 50 calories or less per cup of flour and double the fibre compared to white flour.
