To get the most health benefits from beets, you should actually eat them raw or juice them, since cooking them depletes their phytonutrient value. Watch naturopathic specialist Pina LoGiudice, ND, explain why it's best to drink beets in juice form.
Absolutely, and most people think that if they're just eating beets that they're going to get in all these wonderful health properties, which they are. But what most people don't realize is that whenever you're cooking beets, or you're fermenting them, pickling them, any type of form of cooking the beets, you're going to get a slow decline of the phytonutrient value, so you're not going to get those great antioxidants or that anti-hypertensive properties.
So if you're looking for something medicinal, you really want to eat your beets raw or juice them raw.
