There isn't a specific best lean protein, the key is variety and where you're sourcing it from. It's really important to make sure you are getting wild fish, free range poultry, grass fed meats just so that you're getting the most natural form of the protein, and it's far more humane for the animal and better for the planet.
I am a big fan of seafood and again the more variety the better, two in particular that I'm a big fan of are wild salmon and black cod because they're both so rich in Omega-3s, which are very, very anti-inflammatory and those are two things that we should be sure to include regularly.
