A Smarter Way to Marinate Meat

Hi, Dr. Oz here with a smart simple tip for a healthier barbecue. Marinate your meat in lemon juice or vinegar. All cooked foods, but especially those derived from animals contain compounds called advanced glycation end products or AGES, A-G-E-S. These compounds cause inflammation that can lead to heart disease, diabetes, even cancer.

Cooking, especially at high heat, increases the formation of AGES, but one study found that marinating foods in an acidic low pH liquid like lemon juice or vinegar helps slow formation of AGES down significantly. Marinating beef in lemon juice for an hour cuts the AGES in half. Another way to reduce AGES is to cook over low, moist heat.
