Last night I made a super yummy caesar sald.  My husband even begged me for leftovers to take for lunch to work today, and he's usually not a salad guy.  So here's the recipe:
12 C shredded Romaine Lettuce
1.5lbs boneless, skinless chicken breast
1/2 tsp sea salt
1/4 tsp black pepper
3 whole wheat pita bread halves (7" in diameter)
6 cotija cheese (Mexican Parmesean cheese) crumbled
Wash and dry lettuce.  Shred lettuce into bite size pieces. Divide into 6 serving dishes.
Sprinkle chicken with salt and pepper and grill approximately 5 minutes on each side or until no longer pink.  Slice chicken into strips. Divide chicken evenly into 6 servings and lay over the salad dishes. Sprinkle 1 tsp cotija cheese over each dish. 
Cut pita halves in to pieces and serve on the side of the salad. 
1 chipotle pepper in adobe sauce
1 clove/tsp minced garlic
2T lime juice
1/2 C plain, fat free Greek yogurt
2T olive oil
1/4 tsp sea salt
1/8 tsp ground black pepper. 
Mix all ingredients in a blender until smoothe. Pour approximately 1/4 C over each serving dish.  Enjoy!
