Ok so in honor of Cinco de Mayo how about some healthy fajitas for dinner tonite?

These are simple, satisfying and a fun way not to miss the celebration.

Ingredients:

1 lb of Flank Steak

Salt and Pepper to taste

3 Tbsp of fresh squeezed lime juice

1 large Vidalia or Spanish onion sliced thin

2 large garlic cloves: or 3 or 4 if you’re not on a first date :)

2 tsp of chili powder

1 tsp of cumin (great for nice smoky flavor)

Low carb-high fiber tortillas

Nonstick cooking spray

In a glass container combine your sliced steak with 2 Tbsp of lime juice, the sliced onion, garlic, and your chili/cumin powder. Let marinate for 60 minutes in the fridge to let the flavors marry. Then, heat a pan to high heat, spray nonstick cooking spray and add your flank steak. Once your steak is cooked to a desired doneness place on cutting board to rest and drizzle last Tbsp of lime juice over it. Then add the onion to the already hot pan and cook to desired doneness-I like mine almost caramelized.  Make sure you move the onions around a lot to avoid burning and maximize flavor. Once steak has rested for 5 minutes or so cut into small strips. Place appropriate portion of steak and onion on a low carb-high fiber tortilla. Lastly, maybe add some cilantro, chopped tomatoes, and some field greens for top it off.  Makes 4-6 servings
