It's Friday, which means a new recipe from Quick Wellness :)

Taco Corn Pie


This recipe is from the Wellness Forum and was on an insert in their package of Corn Meal Bread.  I love that the mixes from the Wellness Forum are very healthy, and I don't have to too much to get dinner on the table.  This recipe was super easy, and the family loved it.  I also loved that I could make it all ahead of time, and then just put it in the oven before dinner time.


1 package Wellness Forum Taco Taco Mix, prepared according to package directions

1 package Wellness Forum Corn Bread Mix, prepared according to package directions

1 small onion, chopped

3 cloves garlic, minced

1 package frozen corn

1 can of black beans, drained and rinsed

1/2 teaspoon of sea salt

8 ounces of tomato sauce

1/2 cup chopped black olives (I left these out, it was still delicious)



Preheat oven 350 degrees

Saute onions and garlic in water till they are tender

Stir in corn, beans, sea salt, taco mix, tomato sauce and olives.  Bring to a boil.

Pour into a 9x13 casserole dish

Pour the cornbread mixture over the "meat" mixture

Bake for 40 minutes, until the top is golden brown, and a toothpick inserted into the cornbread comes out clean
