Following are some meal options for someone on a plant-based diet:
  • Breakfast: whole-grain cereals with an alternative milk or nuts, scrambled tofu, nondairy yogurt with nuts and berries
  • Lunch: a bibimbap, black bean and corn enchilada, Kale and farro, barley-stuffed pumpkin, kabocha squash
  • Dinner: yams, green bean almondine, eggplant dip, herbed whole wheat stuffing, vegetable broth soup, roasted cauliflower and grapes, roasted brussels sprouts.
