What are the health benefits of soluble fiber?

Consuming soluble fiber tends to lower serum lipids and reduce the body's levels of both glucose and insulin.
When too much LDL cholesterol circulates in the blood, it can slowly build up in the inner walls of the arteries that feed the heart and brain. Soluble fiber from foods has been shown to help lower LDL cholesterol. The fiber binds cholesterol and removes it from your bloodstream.
 
Good sources of soluble fiber include:
  • oatmeal
  • apples
  • pears
  • kidney beans
  • barley
  • brussels sprouts
  • whole grains
  • nuts, especially almonds, pecans and walnuts
