What's a recipe for a savory corn muffin?

These southwestern-style corn muffins get a surprising lift of flavor from crushed pineapple.

Smoky Cheese Chili Muffins

Makes: 10 servings
Prep time: 15 minutes
Cook time: 20 minutes

Ingredients:
1 cup all-purpose flour
1 cup cornmeal
1 tablespoon baking powder
1/2 teaspoon salt
1 can (8 oz.) Dole crushed pineapple, drained
1 whole egg, beaten
1 egg white, beaten
1/2 cup low-fat milk
1/4 vegetable oil
1/4 cup diced green chiles
1 1/4 cups finely chopped smoked cheddar cheese

Directions:
Preheat oven to 400 degrees F.

Combine flour, cornmeal, baking powder, and salt in large bowl.

Combine crushed pineapple, egg, egg white, milk, oil, and chiles in medium bowl. Stir into dry mixture just until moistened. Stir in cheese.

Spoon batter into paper-lined muffin cups coated with vegetable cooking spray. Bake 18 to 20 minutes or until wooden pick inserted comes out clean.
