What is a good shrimp stir-fry recipe for people with diabetes?

This stir-fry pairs shrimp with spinach, a nutritional superfood, and tops it all off with a sweet and spicy Asian sauce. High in vitamins, spinach has a low glycemic index, which is important for people with diabetes. Whip up this dish in minutes for a healthy, filling meal.

Spicy Shrimp & Spinach

Ingredients

1 tbsp grapeseed oil, divided
10 oz fresh spinach leaves
1-1/2 lb raw medium shrimp, peeled and deveined
1/4 cup wine: sake/saki, Japanese or sweet white wine
2 tbsp oyster sauce
2 tsp minced garlic
1 tsp light honey
1 tsp chili paste (Thai)
1 medium red bell pepper, seeded and cut into strips

Directions

1. In large skillet, over medium heat, add 1 teaspoon oil. When oil is hot, add spinach and cook until wilted, about 2 minutes. Remove from pan and set aside.
2. Return pan to burner, add remaining 2 teaspoons oil to pan and adjust heat to medium-high. Add pepper strips and cook 1 minute. Add shrimp and cook another 2 minutes.
3. In small bowl, whisk sake, oyster sauce, garlic, honey, and chili paste. Pour over shrimp and peppers. Cook until shrimp is opaque, about another 1 to 2 minutes. Turn off heat, stir in spinach. Serve.
