What is a ranch salad recipe for people with diabetes?

This salad tastes like a chicken club sandwich in a bowl -- and you won't miss the bread, thanks to the tangy buttermilk ranch salad dressing. It's low in carbs, so it's ideal for people with diabetes.

Chicken Ranch Salad

Ingredients

1 medium garlic clove, sliced
3/4 cup low fat buttermilk
2 tbsp mayonnaise
2 tbsp fresh lime juice
1/2 tsp kosher salt
1/2 tsp black pepper
1/8 tsp thyme, leaves, ground
4 cups romaine lettuce, chopped
1 pinch chopped parsley
1-1/2 cup cooked chicken breast, diced
1/2 cup fresh chopped celery
1/2 cup sliced carrots
1/2 cup sliced cucumber

Optional toppings
1/4 cup plain croutons (optional, sprouted grain or whole grain bread)
1/2 cup fresh chopped red onion , thinly sliced (optional)
3 piece reduced sodium bacon slices, cooked , crumbled (optional)
1 tsp chopped parsley (optional)

Directions

1. In food processor or blender, combine garlic, buttermilk, mayonnaise, lime juice, salt, pepper, and thyme. Blend on high for one minute.
2. Combine chicken, cucumber, carrots, and celery. Pour dressing over the chicken mixture. Refrigerate for at least 2 hours.
3. To serve, arrange 1 cup of lettuce on each of 4 plates. Divide chicken salad into four equal amounts and place on top of the lettuce.  
4. Top with croutons, bacon, red onion slices, and fresh parsley, if desired.
