What is a healthy banana bread with fruit recipe?

Bananas pair nicely with many kinds of fruit. For a tasty twist on the usual quick bread, try this recipe for banana cranberry bread.

Banana Cranberry Bread

Makes: 24 servings
Prep time: 20 minutes
Cook time: 1 hour

3 extra-ripe medium Dole bananas
2 cups fresh Dole cranberries
1 1/2 cups sugar
4 teaspoons grated orange peel
3 eggs
1 cup vegetable oil
5 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1/4 teaspoon salt
1 1/2 cups chopped walnuts (optional)

Preheat oven to 350 degrees F.

Blend bananas in covered blender container until smooth (1 1/2 cups).

Chop cranberries; combine with sugar and orange peel. Beat in bananas, eggs, and oil.

Combine dry ingredients and nuts; beat into banana mixture just until blended. Turn into two greased 9x5-inch loaf pans.

Bake 50 to 60 minutes or until wooden pick inserted comes out clean. Cool 10 minutes. Invert on wire rack to complete cooling.
