What are the health benefits of Brussels sprouts?

Brussels sprouts are finding themselves on gourmet menus for good reason. Whether roasted whole or chopped and sautéed, they are packed with flavor and nutrition. A cruciferous vegetable, Brussels sprouts contain vitamins A and C, folic acid and fiber. Experts believe that cruciferous vegetables may help prevent certain cancers.

Keeping it simple is often the best recipe for success. For golden roasted Brussels sprouts: Wash one package of fresh, raw Brussels sprouts and trim the woody stem. Toss Brussels sprouts with olive oil, salt and pepper. Add the juice of one lemon. Place on a cookie sheet and into a pre-heated 450 degree oven. Roast for 15 to 20 minutes until Brussels sprouts start to caramelize.
