What equipment does a low-fat kitchen require?

You need no special equipment to have a low fat kitchen, what you need is some basic nutrition knowledge. First of all, kitchens should be concerned more with the type of fat rather than how much fat. You can use knives to trim excess fat off meats before cooking. Use a large spoon to remove congealed fat from soup stock before using in soups. Stock the refrigerator drawers with fresh fruit and veggies. Stock the pantry with whole grain crackers and other healthful items and avoid purchasing high fat, fried junk food. Purchase low fat dairy products like yogurt and cheese. Eat more beans. Eating healthy fat and avoiding "bad" fats takes only the desire and commitment to make it happen, not expensive equipment.
