The shoulder is cut primarily into roasts, including one called "picnic ham," which is not a true ham since it comes from the upper part of the foreleg. A less expensive substitute for regular ham, picnic ham is sold both fresh and smoked; however, it usually contains about 24 percent fat. The shoulder is also cut into chunks for grilling or kebabs.
