What is the difference between preserved food and processed food?

There's an important distinction between preserving food and processing food. Preservation techniques have been used for centuries to keep seasonal food available for safe consumption at other times of the year. Traditional canning, fermentation, and drying processes are examples of food preservation that maintains a great deal of the food's nutritional value. Some of these techniques (fermentation in particular) even enhance the nutritional value of the food.
