What types of fat are found in oil?

All oils contain three kinds of fat -- saturated, polyunsaturated, and monounsaturated-but in varying proportions. For example, olive oil is higher in monounsaturated fats than almost any other oil but still contains some saturated and polyunsaturated fats as well. At the other end of the scale are palm and coconut oils, which contain a small amount of unsaturated fats and have even more saturated fat per gram than red meat. In between are corn, vegetable, and soybean oils, which are predominately polyunsaturated fats. The oil with the highest ratio of unsaturated fat to saturated fat is canola oil. Aside from olive oil, canola oil has the most monounsaturated fat per ounce than any other oil and is the lowest in saturated fats.
