What kinds of tea are available on the market?

More than 150 cultivars, or types, of Camellia sinensis appear in the commercial marketplace. Not surprisingly, there are many different grades of tea, which are determined by the quality of the leaf: whole leaves are the highest grade, followed by broken or small-leaf tea, consisting of smaller or slightly torn leaves. Fanning's are smaller leaf fragments; next in quality comes tea dust, the leftovers of processing. Tea grading is not universal, with the same tea potentially getting different grades in different countries.
