How do I select fresh Jerusalem artichoke?

Although Jerusalem artichokes are available year-round in the produce department of most supermarkets, their prime season is from October to March. Jerusalem artichokes are sold loose or packaged in 1-pound plastic bags. If you're planning to cook them whole, try to choose tubers of similar size, so they will finish cooking at the same time. Choose smooth, plump, clean, unblemished tubers with a minimum of bumps, although protrusions and unevenness on the skin are fine. Farmers are attempting to breed out the bumps in newer varieties, so some are less knobby than others. Avoid any that are limp or spongy or have wrinkled skins, soft spots, a greenish tinge, or sprouts.
