Both her educational accomplishments and extracurricular activities reflect this passion. Kasey graduated from the University of the Incarnate Word with a Master’s degree in Nutrition. Prior to that, she received her undergraduate degree from the University of Mary Hardin-Baylor in Exercise and Sport Science.
Participating competitively in sports from a small child through college, Kasey realized the importance of exercise and good nutrition. She also developed a desire to help others learn how to incorporate physical activity and good nutrition into their lives.
Currently, Kasey is a clinical dietitian with LifeCare Hospital where she works to improve the nutritional status of critical care patients and educate them on proper diets based on individual diagnoses. She also works as a consultant to the San Antonio Metropolitan Health Department to implement the Por Vida Program into Bexar county restaurants, hospitals, schools, and worksite cafeterias. This program is a component of the Healthy Menu Initiative in the Communities Putting Prevention to Work Grant that has been recognized nationally.
Kasey has previously worked as a Nutrition Coach for Lifetime Fitness, where she assessed nutritional needs to develop and implement dietary-care plans and provided nutritional counseling for members. She also has experience in nutritional supplementation through her work with Green Fields Market, a privately owned natural living store in San Antonio, Texas.
In the future, it is a goal of Kasey’s to improve the health of the community as well as the nation through education and improving the environment we live in to make healthier choices easier and more accessible.
