Key Lime Marinade for Grilled Chicken Breasts & Shrimp
"This marinade makes the meat tender and juicy with a lot of flavor but adds very few calories. You can make it ahead and start the marinating process whenever you're ready. I've taken it on camping trips with great results!”

Ingredients
- 1 cup fresh key lime juice
- 1/4 cup olive oil
- 1 tablespoon honey
- 3/4 cup water
- 1/2 teaspoon seasoned salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground thyme
- 1/2 teaspoon ground ginger
- 2 cloves fresh garlic, minced
- 1/2 bunch cilantro, chopped (leaves and stems)
- Whole cilantro leaves, for garnish
- Lime slices, for garnish
- Chicken breasts (boneless, skinless)
- Shrimp, cleaned
Preparation
Place lime juice, oil, honey, water, spices, garlic and cilantro into blender or food processor. Process until well combined. Place chicken or shrimp into a ziplock bag and pour marinade over. Allow to marinate in the refrigerator 3 hours, turning once an hour. (If you let the shrimp marinate for too long it will "cook" the shrimp.) Grill, turning once, until done. Garnish with cilantro and lime slices.
