Diabetes-Friendly Comfort Foods
Eating to prevent or manage diabetes doesn't have to mean giving up foods you love.
Try these lighter versions of "comfort" faves from the American Diabetes Association.
Chocolate Cherry Pudding
Sweet cherries and chocolate are a killer flavor combination—and both ingredients are loaded with artery-protecting antioxidants. Plus, a serving of this irresistible treat has only 105 calories and 18 grams of carbohydrates.

Ingredients

3 tbsp flour
3 tbsp cornstarch
1/4 cup sugar
1/4 cup stevia
Pinch salt
3 cups 1% milk
2 oz semi-sweet chocolate, finely chopped
1 large egg
2 tsp vanilla
2 cups fresh or frozen (thawed) pitted cherries, halved

Preparation

Serves: 12
Serving Size: 1/3 cup
Preparation Time: 5 minutes
Cook Time: 15 minutes


In a medium saucepan, whisk together the flour, cornstarch, sugar, stevia, and salt. Whisk in the milk until well incorporated, making sure to scrape, the corners of the saucepan. Bring to a gentle simmer over medium heat, stirring frequently. Add in 1 oz of chocolate. Simmer for 2 minutes until the pudding has thickened slightly.

In a small bowl, lightly beat the egg, gradually beat 3/4 cup of the hot pudding into the egg, then whisk the egg mixture back into the pan and cook for 1 minute. Remove from the heat and stir in the vanilla. Pour the pudding into a bowl and cover with plastic wrap directly on the surface of the pudding. Cool to room temperature and then refrigerate for 30 minutes. Stir in all except 4 tbsp of the remaining chocolate. Mix in the cherries.

Add the pudding to 8 individual dessert cups. Sprinkle each cup with 1/2 tsp of chopped chocolate.
