    This festive salsa uses tropical fruits instead of tomatoes; lime juice and Serrano peppers provide brightness and heat. Serve this salsa over grilled chicken or pork, or as a dip for chips.

    Dole Pineapple Mango Salsa

    Makes: 6-8 servings
    Prep Time: 16 min.

    Ingredients
    • 1-1/2 cups DOLE® Fresh Tropical Gold Pineapple cut into chunks
    • 1 ripe DOLE Mango, peeled and chopped
    • 1/2 cup chopped red cabbage
    • 1/3 cup finely chopped DOLE Red Onion
    • 1/4 cup chopped fresh cilantro
    • 2 tablespoons lime juice
    • 1 to 2 Serrano or jalapeno peppers, seeded and minced
    Directions

    1. Stir together pineapple, mango, cabbage, red onion, cilantro, lime juice and peppers in medium bowl.

    2. Cover and chill for at least 30 minutes to blend flavors.

    3. Serve salsa over grilled fish or chicken with grilled vegetables. Garnish with lime wedges, if desired.

    Delicious and easy, this recipe is a great toper for fish or chicken.

    Makes 8 servings

    • 1 mango - peeled, seeded and chopped
    • 1/4 cup finely chopped red bell pepper
    • 1 green onion, chopped
    • 2 tablespoons chopped cilantro
    • 1 fresh jalapeno chile pepper, finely chopped
    • 2 tablespoons lime juice
    • 1 tablespoon lemon juice

    Directions

    1. In a medium bowl, mix mango, red bell pepper, green onion, cilantro, jalapeno, lime juice, and lemon juice. Cover, and allow to sit at least 30 minutes before serving.
