Cashew Turkey Salad Ingredients
1/2 lb skinless cooked turkey breast
3/4 cup fresh chopped celery
1/2 cup unsalted cashews
1/2 cup chopped red bell peppers
1/4 cup mayonnaise
3 tbsp sour cream
1 pinch white pepper (optional)
2 scallions, sliced
Directions
- Chop turkey, celery, cashews, and red bell pepper. Slice scallions.
- In large bowl, toss the turkey, celery, cashews, scallions, and bell peppers.
- In small bowl, blend mayonnaise, sour cream, and white pepper.
- Add dressing to turkey mixture. Toss to coat well.
Additional Information
Use as a filling for tomato or cantaloupe half, or serve over a bed of fresh salad greens. Roasted, chopped almonds or walnuts can be substituted for cashews.
