    Avocados are not only low in carbs, but they have a slew of healthy benefits. They're low in sugar and contain heart-boosting and anti-inflammatory nutrients too.

    Avocado Salsa

    Ingredients

    16 oz frozen sweet corn kernels, thawed
    4-1/2 oz pitted calamata olives, drained and sliced (or any type of olives)
    1 medium red bell pepper, chopped
    1 small onion, chopped
    5 medium garlic cloves, minced
    1/3 cup olive oil
    1/4 cup fresh lemon juice
    3 tbsp cider vinegar
    1 tsp oregano leaves, dried
    1/2 tsp salt
    1/2 tsp black pepper, ground
    4 fresh California avocado, pitted and diced

    Directions
    • In large bowl, mix corn, olives, red bell pepper, and onion. Set aside.
    • In small bowl, mix garlic, olive oil, lemon juice, cider vinegar, oregano, salt, and pepper. Pour into corn mixture and toss to coat.
    • Cover and chill in refrigerator 8 hours, or overnight.
    • Peel, dice and stir avocados into salsa before serving.
    Makes 32 servings

    Here is a healthy salsa recipe: Dice four Roma tomatoes and add them to a bowl. Chop one medium onion fine. Add 1/4 cup chopped cilantro. Add one small chopped jalapeño pepper. Remove the seeds. Add 1/4 lime juice. Add one chopped avocado. Salt to taste. Mix well and store in the refrigerator till ready to serve.
