    Wrap bacon around pineapple chunks for a sweet and savory appetizer that’s very low in carbs. Water chestnuts and soy sauce give these nibbles delicious Asian flare.

    Bacon and Pineapple Appetizers

    Ingredients

    12 pieces raw bacon slices, cut in half crosswise
    12 canned water chestnuts, drained, sliced in half
    1 cup canned pineapple chunks in water, drained, sliced in half, equal to 24 half-chunks
    4 tsp low sodium soy sauce

    Directions
    • Preheat oven to 400°F. Wrap bacon slice around pineapple chunk half and water chestnut half. Secure with wooden toothpick.
    • Place appetizers in shallow baking dish.
    • Bake 15 minutes. Brush with soy sauce and bake additional 5 to 10 minutes or until bacon is crisp.
    Makes 24 servings
