This recipe takes only a few minutes to prepare: Put the chicken into the slow cooker in the morning and find a meal ready in the evening. Chef Michel Nischan serves the chicken with quinoa and barley -- two satisfying carbs that are low on the glycemic index, so they'll help keep your blood sugar on an even keel.

    Easy Slow Cooker Chicken

    Ingredients

    1 tsp black pepper
    1 pinch kosher salt
2 tbsp butter, sliced into pats

6 tsp fresh thyme, chopped (about 6 sprigs)
    1/4 cup white wine
1 whole raw chicken (about 3 pounds)

    Directions

    1. In slow cooker, place chopped shallot.
    2. Discard organs. Rinse and pat dry chicken.

    5. Cover and cook on low heat setting for 8 hours or on high heat setting for 4 hours.
