    Dr. Patrick Maguire answered:
Parts of the world with the highest number of cases of squamous cell carcinoma (SCC) of the esophagus include parts of the Middle and Far East, where people regularly consume hot, spicy foods and beverages as part of the culture. Clear correlations have been shown between consumption of spicy foods, including salted meats as well as hot drinks and an increased risk of developing esophageal SCC in Taiwan, Uruguay, and several other countries. A decreased risk has been shown for people who eat more fruit, vegetables, and fish.
