    The edible part of this Japanese pumpkin has a very meaty texture and fine flavor. When cooked, it makes a smooth and creamy puree. It looks like a flattened drum and has a dark green thick skin. It’s best to buy kabocha squash when the skin is very hard to scratch with your fingernail. Acorn or butternut squash can be substituted for kabocha.
