Irradiation is a process of exposing fresh produce to energy beams to kill germs and insects that cause food to spoil more quickly and could potentially lead to food poisoning. While this process keeps some produce looking nice on the shelves of our supermarkets longer, we don't know how exposure to radiation will alter the plants' chemical composition, or how our bodies will react long term to irradiated foods.
