    Butter is a dairy product made by churning fresh or fermented cream or milk. It is generally used as a spread and a condiment, as well as in cooking applications. The earliest butter was made from sheep or goat’s milk.

    Butter, according to USDA standards, is a concentrated source of milk fat made from milk, cream, or both and contains a minimum of 80 percent fat along with some water and nonfat milk solids (casein, lactose, and minerals). Butter is made by churning pasteurized cream using batch-process (35 to 45 percent fat cream) or continuous (42 to 44 percent fat cream) churns. Butter may be salted or unsalted. Lightly salted butter is generally referred to as "sweet cream butter" and unsalted butter as "sweet butter." Sweet cream butter and sweet butter are made from pasteurized sweet cream to which no starter has been added. Natural coloring agents, such as annatto and carotene, may be added to give butter a golden yellow color. Otherwise, fresh butter may be almost white.

    Light or reduced-fat butter typically contains nonfat milk, water, and/or gelatin and is 40 percent (or less) milk fat. Reduced-fat butter should not be substituted for regular butter in baking or frying due to its high moisture content and its lighter, less rich flavor.
