    Try this healthy chicken sandwich recipe:

    Makes 4 sandwiches

    Ingredients:
    • 1/2 cup low-fat mayonnaise
    • 1 teaspoon curry powder
    • 3 tablespoons red onion, diced
    • 1/4 cup dried cranberries
    • 2 cups roasted white meat chicken, skin removed (shredded or chunks)
    • 1/2 fresh mango, peeled & diced
    • 4 mini whole grain pitas (or use “100 calories worth” of whole grain bread)
    Directions:
    • Mix mayonnaise, curry powder, onion and cranberries together.
    • Add chicken and mix well.
    • Stir in diced mango.
    • Spoon 1/2 cup of the chicken salad mixture into each pita pocket.
    Serving Size: 1 sandwich: 305 calories

    You can also go bread-less and enjoy a 1/2 cup chicken mixture (225 calories) over a mixed green salad.

    To make a healthy chicken sandwich we want to keep it low in fat. It also provides an opportunity to add vegetables and whole grains. To accomplish this we can place a grilled chicken breast on a 100% whole grain bun with a teaspoon of Dijon mustard, along with grilled vegetables (grilled zucchini, yellow squash, and onion). Other whole grain bread choices are: rye bread, a whole grain pita pocket or a whole grain tortilla.

    Nearly all of McDonald’s sandwiches have more than five grams of sugar -- where’d they hide it? Blame the bun. Try this chicken classic sandwich do-over. You can add barbecue sauce to this recipe if you wish. Just be sure to use one that is sugar free.

    Chicken Classic Burger

    4 chicken breasts
    Salt and pepper, to taste
    4 slices Monterey Jack cheese
    4 Food for Life Ezekiel 4:9 Sprouted Grain Burger Buns
    4 leaves or green-leaf or butter lettuce
    4 thin slices of tomato
    4 Tbsp. mayonnaise
    1. Preheat grill to medium to high heat. When the grill is ready, season the chicken breasts to taste and cook until done, approximately 5-7 minutes per side. Top each breast with a slice of cheese; close the grill and cook for 1 more minute or until the cheese starts to melt.
    2. Build the sandwiches to your liking using lettuce, tomato and mayonnaise.
