Here are a few dietary recommendations for those with canker sores:
    • Stay away from spicy foods.
    • Avoid foods that are too hot.
    • Avoid foods with crusts or sharp edges, such as crackers and chips.
    • Avoid foods that are highly acidic, such as tomatoes and citrus juices.
    • Stay away from foods high in arginine, an amino acid found in chocolate and nuts.
    • Eat foods high in lysine, an amino acid. Lysine is found in cheese, eggs, fish, red meat, lima beans, potatoes, and soy products.
Usually canker sores heal within a week or two. However, if you have a large canker sore, call your doctor or dentist. There are some oral medications that can help dry up the mouth ulcer.

The association of recurrent canker sores with food allergies is widely accepted, as a diet eliminating allergic foods will most often prevent further recurrences. The most common offending foods are typically milk products and wheat. Gluten, a grain protein, appears to be a major causative factor for many individuals, as well. Withdrawing gluten from the diet results in complete remission of recurrent canker sores in patients with celiac disease. It also usually produces some improvement in other patients.

Underlying gluten sensitivity would also contribute to nutritional deficiencies. The lining of the mouth and throat is often the first place where nutritional deficiency becomes visible because of the high turnover rate of the cells that line these epithelial surfaces. There are several studies that show nutrient deficiencies to be much more common among recurrent canker sore sufferers than in the general population, especially deficiencies of thiamine, folic acid, vitamin B12, vitamin B6, and iron. When nutrient deficiencies were corrected, the majority of subjects with recurrent canker sores experienced complete remission. Foods high in these nutrients include brewer's yeast, nuts, and whole grains for thiamine, folic acid, and vitamin B6; lean meats and fish for vitamins B12 and B6 as well as iron; and legumes and leafy green vegetables for folic acid.
