    This Thai-inspired cucumber salad uses a small amount of sweet and sour dressing to coat thinly sliced cucumbers. Nutrient-rich cucumbers contain vitamins C and K, along with potassium -- plus they’re low in carbs. Add it all up: They’re perfect for people with diabetes.

    Peanut Cucumber Salad

    Ingredients

    1/4 cup rice vinegar
    1 tsp sugar
    1/2 tsp salt, to taste (optional)
    3 medium cucumbers, (about 1 1/2 pounds; English cucumbers preferred)
    1/2 cup dry roasted unsalted peanuts, coarsely chopped

    Directions

    1. In medium bowl, whisk vinegar, sugar, and salt.
    2. Peel cucumbers, if desired, and cut into very thin slivers. Add to dressing and toss. Sprinkle with salt and peanuts. Serve.
