    Store beets in the crisper; lop off greens before refrigerating and use them in a salad or cook them as you would spinach and other greens.

    For raw beets, remove the greens leaving about an inch of stems.  You can use the beet greens raw in a salad or cooked.

    Store the beet roots in a plastic bag in the crisper of the refrigerator for up to 3 weeks.  Wait to wash them just before cooking.  The longer beets are stored, the flavor will change from sweet to starchy.  So it’s best to eat them as soon as you can.

    If beets are cooked, store them in a sealed container in the refrigerator.  Eat them within 3-4 days.
