Marisa Moore of Academy of Nutrition and Dietetics answered:For raw beets, remove the greens leaving about an inch of stems. You can use the beet greens raw in a salad or cooked.
Store the beet roots in a plastic bag in the crisper of the refrigerator for up to 3 weeks. Wait to wash them just before cooking. The longer beets are stored, the flavor will change from sweet to starchy. So it’s best to eat them as soon as you can.
