    This root vegetable is made predominantly of water and a fibrous starchy material. Since it is very low in calories and has a mild flavor, it makes a nice crunchy addition to just about any dish. Water chestnuts are most frequently used in Chinese cooking and can be found fresh or in cans in Chinese markets. If you are using fresh water chestnuts, remove the outer husks.
