    These are essential for adding flavor in the absence of cooking oils and meat or poultry bases. Use them instead of water as the main ingredient in soups, stews, sauces, and even dressings. They are particularly useful for braising vegetables, in that the richly concentrated flavors of the stock will act as a cooking medium and contribute to the flavor of the vegetables. Make a large quantity at once and freeze it in ice cube trays or small containers. You can then remove only the amount that you need to prepare the day’s meals.
